PB Oat Energy Bites (Gluten Free)

Who doesn't like a quick pick me up when you are running around, or just in the mood for a bit of protein in the middle of the day? These PB Oat Energy Bites are packed full of protein, fiber and nutrients.

As soon as my kids come home from school, they run to the freezer to grab a couple of these delicious energy bites for a quick afternoon snack. They are perfect for on the go and do keep you feeling satisfied until your next meal. You can swab the peanut butter with any nut butter of your choice and, do I need to say they freeze really well? Because they do, and in fact, my we prefer them right out of the freezer!


PB Oat Energy Bites

Yields: 12-15

Total time: 10 minutes


Ingredients

  • 1 1/2 cups quick oats (or old fashioned oats) (or GF oats)

  • 1 1/4 cups peanut butter (or any nut butter)

  • 1/3 cup maple syrup (or honey)

  • 1 tbsp hemp seeds

Directions

  1. In a medium mixing bowl, combine all ingredients. Stir with a wooden spoon until the ingredients come together.

  2. With damp hands, roll in the palm of your hands the mixture into 1" size bites and place in a air tight container. These will last on the counter for up to 4 days, or in the freezer for a month.
