My Mixed Berry Tofu Pudding requires just 5 simple ingredients and can be prepared in under 10 minutes. Rich in protein and vitamins, it's the perfect quick dessert for a warm evening.

Mix Berry Tofu Pudding
Yields: 4-6 servings
Prep-time: 5 minutes
Total-time: ~10 Minutes
Chill-time: 2-3 hours
Equipment: Blender or Food processor, liquid measuring cup, measuring spoons, medium glass container with lid.

Ingredients
16 oz Silken Tofu, drained
1 1/2-2 cups frozen, or fresh berries, rinsed
1/3 cup real maple syrup
pinch of salt
1/2 tsp pure vanilla extract
Directions
Combine all the ingredients in a food processor (ideal for fresh berries) or a blender (perfect for frozen berries).
Blend for about 20-30 seconds, or until all of the ingredients are well blended and you have reached a smooth and creamy texture.
Pour into a glass container with a lid.
Chill in the fridge for at least 2-3 hours, or until firm.
Top with your favorite toppings and enjoy!
Store in the fridge for up to 3 days.
