Avocado Chocolate Pudding

Avocado Chocolate Pudding is an excellent light dessert suitable for any season. The avocados contribute a smooth, velvety texture when combined with cocoa powder and maple syrup. It's packed with monounsaturated fats, minerals, and vitamins, and the best part is, no one will even notice! Savor this dessert with vanilla bean ice cream or whipped cream.

Avocado Chocolate Pudding
Yields: 2-3 Servings
Prep-time: 5 minutes
Chill-time: 2 hours or overnight
Equipment: Food processor or blender, spatula, liquid measuring cup, measuring spoons, paring knife, container with lid.
Ingredients
2 ripe medium avocados
1/4 tsp salt
1 tsp pure vanilla extract
3 tbsp unsweetened cocoa powder
3 tbsp real maple syrup
2 tbsp chocolate almond milk, or any milk of your choice
Directions
In a food processor or blender, combine the avocado meat, salt, vanilla, cocoa powder, maple syrup, and milk. Blend for approximately 20 seconds. Scrape down the sides and bottom of the container to ensure all ingredients are well mixed. Blend again for another 20 seconds until the mixture is smooth and creamy.
Pour into a container with a lid and chill in the fridge for at least 2 hours or overnight. This time allows the pudding to firm.
Scoop into your favorite dessert bowl and enjoy with a side of ice cream or whip cream.
Pudding will last about up to 4 days in the fridge.
