This compote can be prepared in just 20 minutes and needs only a handful of ingredients.

My Berry Compote with Chia Seeds is a modern twist on the classic Compote, which usually needs a lot of sugar to turn the fruit into a syrup. In my version, maple syrup serves as the sweetener, and you can also add a tablespoon of your favorite jam to elevate the compote. The natural sweetness should come from the berries, with the maple syrup enhancing it. The chia seeds provide extra nutrition. I enjoy spreading this on breakfast items like pancakes or waffles, toast, yogurt, or using it as a topping for ice cream.
Berry Compote with Chia Seeds
Prep-time: 5 minutes
Cook-time: 15-20 minutes
Use right away or store in the fridge for 1 week
Equipment: 1 small sauce pan, measuring spoons, liquid measuring cup, whisk, wooden spoon
Ingredients
1-2 cups frozen (rinsed) or fresh mixed berries, or your favorite berry
2-3 tablespoons of water
2 tablespoons real maple syrup
1 tablespoon jam (I like blueberry jam or raspberry jam) (optional)
2-3 teaspoons arrowroot powder or corn starch
2-3 tablespoons chia seeds
Directions
Rinse your berries, whether frozen or fresh, and place them in a small saucepan.
Set the heat to medium and add the maple syrup, along with the jam if you're using it, and water. Once the berries begin to heat up, gradually add the arrowroot powder, stirring continuously with a whisk to prevent clumping. This will help thicken your compote.
At this stage, your berry mixture should appear moist. Increase the heat to medium-high and bring the mixture to a boil, stirring often to stop the berries from sticking to the bottom of the saucepan.
Let the berry mixture simmer for approximately 10-15 minutes, or until it achieves a sauce-like consistency. Since you're not preparing jam, stop cooking once the mixture smoothly coats the back of a spoon.
Take it off the heat and add the chia seeds. Stir once and allow the chia seeds to absorb the sauce's moisture for approximately 1-2 minutes. After that, stir again to ensure the chia seeds are fully mixed in.
Transfer into a lidded dish, and either use immediately or let it cool on the counter before refrigerating for up to a week.
